Cricket never forgave me for not having birthday cake for her birthday in September, so I had to make one for our Three Days of Happy birthday bash! I searched the internet for the perfect pumpkin cake recipe and found one on Pinterest. Fruitables Pet Food had provided me with some cans of pumpkin to experiment baking with, and since the dogs love pumpkin the timing was just right.
As I often do, I tweaked the original recipe I found a bit, but here is a link to it on Pinterest if you don’t quite like my version.
Pumpkin & Peanut Butter Cake
Ingredients:
1 cup flour
1 tsp baking soda
1/4 cup all natural peanut butter
1/4 cup vegetable oil
1 cup Fruitables canned pumpkin (*I used weight loss supplement because it is what I had – more on this later)
1 tsp vanilla
1/3 cup honey (I used raw local honey)
1 egg
Directions:
Mix all ingredients together and pour into a greased 8″ round cake pan (or special dog bone silicone cake pan) and bake at 350 degrees for 30 minutes. Let cool.
For frosting I mixed plain yogurt and some of the canned pumpkin together (approximately equal amounts) and added some whole wheat flour to thicken it.
I topped the cake with some of the homemade Apple Cinnamon treats I baked last week, along with some Fruitables Skinny Minis Apple Bacon treats that I had on hand.
*You can use any kind of canned pumpkin, EXCEPT for pumpkin pie filling.
In retrospect, I should have done something different to make it a bit more colorful and pretty, but the dogs didn’t care! You can see the anticipation on their faces below:
Luke was such a good boy, sitting and waiting patiently! His training has definitely been paying off.
They LOVED it…..Luke had to clean up every crumb. Sheba took hers out of the bowl and chomped on it whole…..typical of her, next time I’ll break it into pieces for her!
